Easy cold weather recipes for any occasion. I want to share some of my favorites. These recipes are definitely family or crowd pleasers. Try them and see what you think. I have used each one for several different occasions and you cannot go wrong.

Loaded Broccoli Potato Cheese Soup

Ingredients:

  • 2 14.5 oz cans chicken broth
  • 2-3 large carrots, peeled and diced
  • 4 med potatoes, peeled and cubed
  • 1 tsp onion powder
  • 2 small heads broccoli( wash & cut small)
  • 3 Tbs butter
  • 1/3 cup flour
  • 3 1/2 cups milk
  • 4 cups shredded cheddar cheese
  • 1 tsp Salt
  • 1/2 tsp garlic pepper
  • 6 slices bacon, cooked and chopped
  • In a large pot combine broth, carrots, potatoes and onion powder. Bring to boil, cover and simmer for about 15 minutes.
  • Broccoli added, cover and simmer additional 10 minutes.
  • While simmering, melt butter in large sauce pan. Whisk in flour and cook for another minute (or until golden brown). Whish in milk and cook for additional 5 minutes until the sauce thickens
  • Add cheese and stir until melted. Add salt and garlic pepper
  • Put cheese sauce into ingredients in large pot and stir until well combined
  • Add more milk if too thick. Salt and pepper as needed
  • Top with bacon pieces and serve.

Mashed Potato Casserole

  • 5 lbs potatoes
  • 1 cube butter
  • 1 cup sour cream
  • 8 oz block cream cheese

Cook potatoes until soft, add butter, sour cream and cream cheese and mix until melted and combined thoroughly.

Put in baking dish and bake for 30 minutes at 350 degrees. Garnish as desired

“Copy Cat” Chili

  • 2 pounds ground beef
  • One 29 oz can tomato sauce
  • 1/2 cup diced green chili (I use canned chilis)
  • One 29 oz can kidney beans (with liquid)
  • One 29 oz can pinto beans (with liquid)
  • 1 cup diced onion
  • 1/4 cup celery, diced
  • 3 med tomatoes, chopped ( I use canned tomatoes)
  • 2 tsp cumin powder
  • 3 Tbs chili powder
  • 1 1/2 tsp black pepper
  • 2 tsp salt
  • 2 cups water

Brown ground beef and drain fat, and crumble into small pieces. In large pot combine all ingredients including beef, bring to boil and simmer for 2-3 hours, stirring frequently. Makes about 12 servings.

Chocolate Depression Cake

This is an all-time favorite, so I hope that you enjoy it. Not really sure why the name except that it could surely bring you out of a depression. It is so simple, yet delicious!!

  • 1 1/2 cups flour
  • 1 cup sugar
  • 1/4 sup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 1 tsp white vinegar
  • 1/3 cup vegetable oil
  • 1 cup water

Combine flour, sugar, cocoa, salt and baking soda in large bowl. In another bowl combine vanilla, vinegar, oil and water. Add wet ingredients to dry and mix until completely combined and no lumps remain. Bake in 8×8 pan. (I double the recipe and bake in 9×13 pan which works great). Bake in preheated 350 degree oven for 30-35 minutes, until toothpick inserted in center comes out clean. Let cool completely before frosting.

Frosting

  • 2 Tbs butter
  • 1/4 cup unsweetened cocoa powder
  • 1 cup powdered sugar
  • 1 Tbs milk (or cream)
  • 1/4 tsp vanilla

Melt butter, stir in cocoa powder and mix. Transfer to mixing bowl and using mixer on low sped add powdered sugar, milk and vanilla. Mix until smooth then on med speed beat for 5 minutes until creamy. Spread on cooled cake. Enjoy!!

Easy Cold Weather Recipes

These recipes are especially delicious in cold weather, but definitely not limited to that. I used the soup and cake recipes while living in Malaysia, and it definitely does not get cold there. They were such a hit, that they were requested frequently. I hope that you will find ways to use and share them.
