Easy Fall Dessert Recipes

This is one of my favorite pumpkin recipes.  Since I don’t do pie crust well, this is a great alternative.  Please try it and enjoy!!

Pumpkin Delight

Mix together:

  • 3 cups canned pumpkin
  • 1 3/4 cup sugar
  • 4 eggs, beaten
  • 2 Tbs. cornstarch
  • 1 tsp. salt
  • 1 1/2 tsp cinnamon
  • 2 cans evaporated milk
  • 1 tsp. vanilla
  • (spice as on pumpkin can recipe)

Bake in 9X13 pan at 400° for 15 minutes.  Reduce heat to 350° and continue baking for 20 minutes.

Sprinkle with:  1 Cup brown sugar, 6 Tbs. butter and 3/4 cup chopped pecans, mixed together.

Bake 10 more minutes or until knife comes out clean.   When cool, cover with whip cream and nuts and enjoy!

I look forward every year for September to roll around, so I can have fresh peach pie at Maddox. This is a restaurant in northern Utah, near my hometown. Their peach pie is “To Die For!” I am not always able to get there, but when I do, I am in heaven!!

Fresh Peach Pie

  • 1 9-inch pie shell, baked and cooled*
  • 1/2 cup water
  • 1 cup sugar
  • 3 T cornstarch
  • 1 T fresh-squeezed lemon juice
  • ¼ c peach juice (peel, pit, and mash 1 peach and strain, reserving juice)
  • 1 T butter or margarine
  • 4 c fresh cold sliced peaches

In saucepan, combine water, sugar, cornstarch, lemon juice and peach juice. Cook, while stirring, over medium heat until mixture comes to a boil. Cook an additional 2-3 minutes, until mixture is thickened and clear. Add butter and stir until melted. Pour into bowl and cover surface with plastic wrap. Chill.

When ready to serve pie, prepare peaches, toss with glaze and pour into pie shell. Serve with ice cream or whipping cream, if desired. I desire!

*any size pie shell will work…just adjust amounts of peaches and glaze accordingly

Apple Dumplings

This looks exactly like the apple dumplings that my mom always made when apples were in season. It is a recipe handed down from my grandmother Palmer. I hope you enjoy it as much as my family does. I still make it for our family because it brings back such special memories for all of us. Please Enjoy!!

  • 3/8 Cup sugar
  • 3/4 Cup shortening
  • 3 tsp. baking powder
  • 3 Cups flour
  • 1 1/2 tsp. salt
  • 1 1/8 Cup milk
  • Mix sugar, shortening, baking powder, flour & salt like pie dough. Add enough milk to make proper consistency to roll out. Gently make into a large ball so it does not get tough. Using a rolling pin, roll crust out until it is thin and rectangle in shape. (you will need to flour your surface, and the rolling pin so it will not stick)

Grate 10 large apples over crust and sprinkle with cinnamon, nutmeg, sugar and dot with butter. Roll & cut like cinnamon rolls. (works well to cut with dental floss) Place each roll in a baking dish and pour sugar mixture over.

Sugar Mixture:

  • 3 Cup water
  • 1 1/2 Cup sugar
  • 1 1/2 tsp. cinnamon
  • 3/4 tsp. nutmeg

Bake at 350 for about 30 minutes, until bubbly and rolls are browned.
