I want to share some simple delicious recipes that are some of my new favorites. Most of us don’t have a lot of time to cook, yet we want to serve healthy and nutritious food. I hope you will enjoy these scrumptious recipes that I have discovered.

  • 4-6 boneless skinless chicken breasts
  • 2 Tbs light olive oil
  • Light sour cream – 1 1/2 cups 
  • 1 tsp salt
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • Seasoned bread crumbs-1 1/2 cups 
  • 2 Tbs melted butter

Directions:

Preheat oven to 350F.  Line cookie sheet with foil and spread olive oil on foil. 

In medium bowl stir together sour cream, salt onion powder and paprika.  Add chicken and coat all sides with mixture.  Then  roll each piece in crumbs to coat thoroughly.

Put chicken breasts on foil lined pan and drizzle on top with melted butter.

Bake for 45 minutes until golden brown.

This chicken is so moist and delicious that you will be proud to serve it to your friends and family.

  • Romaine Lettuce
  • 1 can Mandarin oranges, or fresh berries
  • Craisins
  • Apple – diced
  • 1/4 cup sugar and 1/4 cup butter – cook together and stir in a small pkg of slivered almonds.  Cook until all nuts are coated, then put on parchment paper to cool.

Dressing:  

  • 1 pkg Italian Dressing Mix
  • 1/4 cup Seasoned Rice Vinegar
  • 1/2 cup cooking oil

Mix all salad ingredients together.  Do not add nuts until you are ready to add dressing.  This is an all time favorite salad!!

  • 2 bags (12 oz) frozen mixed berries
  • 1 box yellow cake mix
  • 1/2 cup oatmeal
  • Walnuts -1/2 cup chopped
  • 1/2 cup melted butter (1 stick salted)

Instructions:

  •  Heat oven to 350 and spray 9 X 13 baking dish
  • Spread frozen berries in bottom of dish
  • Mix yellow cake mix, oats, walnuts and melted butter.  Stir together until crumbles form.  Sprinkle evenly over frozen berries.
  • Cook for 50-55 minutes until golden brown and bubbly.
  • Serve warm with scoop of vanilla ice cream
  • Enjoy!!
